What do you do when you have tons of Strawberry Milk? You make this delicious chia pudding of course. This gluten-free breakfast has been on repeat in my house and I have a sneaky suspicion it will be for you too! The milk gives this pudding a beautiful purple hue and the chopped strawberries add fibre with another layer of strawberry flavour. The pudding lasts up to 7 days in the fridge so it is perfect to meal prep. If you’re interested in adding a little extra protein to this, you could add a high protein yogurt, cottage cheese, granola and whatever else your heart desires!

Equipment

  • medium sized bowl or 1 mason jar
  • measuring cups and spoons

Ingredients

  • 2 cups strawberry milk
  • ½ cup chia seeds
  • 1 tsp vanilla
  • pinch of salt
  • 5 strawberries diced

Instructions

  • Add milk to the mason jar.
  • Add chia seeds, vanilla and salt and stir well to combine. Wait 5 minutes and stir again to ensure chia seeds are well incorporated.
  • Place in the fridge for a minimum 2 hours or overnight.
  • When ready to eat stir in strawberries.
  • Divide chia into serving bowls and add any other inclusions like granola and yogurt.

Notes

You can divide the recipe into as many jars as you like once the pudding is made.
