What do you do when you have tons of Strawberry Milk? You make this delicious chia pudding of course. This gluten-free breakfast has been on repeat in my house and I have a sneaky suspicion it will be for you too! The milk gives this pudding a beautiful purple hue and the chopped strawberries add fibre with another layer of strawberry flavour. The pudding lasts up to 7 days in the fridge so it is perfect to meal prep. If you’re interested in adding a little extra protein to this, you could add a high protein yogurt, cottage cheese, granola and whatever else your heart desires!
To make this Strawberry Chia Pudding start by adding strawberry milk to a medium-sized bowl or mason jar. Mix in chia seeds, vanilla extract, and a pinch of salt, stirring well to combine. After 5 minutes, stir again to ensure the chia seeds are evenly distributed. Place the mixture in the fridge for at least 2 hours or overnight. When you’re ready to eat, stir in the diced strawberries. Divide the pudding into serving bowls and add your favourite toppings like granola, yogurt, or cottage cheese.
