Gluten Free Granola with Macadamias

It’s viral for a reason folks! About a year and a half ago, I posted this macadamia granola recipe, and y’all went bananas! This recipe quite literally pulled me out of a major Instagram slump. This recipe started the greatest granola love affair the internet has ever seen. Now, 18 granola recipes later, I realized this ridiculously delicious granola was never on my website! Oh, the shame! But it is here now, and I couldn’t be more excited for you to try it – no more mindless scrolling through my Instagram feed to find all you need to make this delicious granola. It’s all here in a fancy little printable package waiting for you to bake and devour! This Macadamia Granola is packed with healthy fats and protein. This granola is not only tasty but also incredibly nutritious. I use macadamia butter for this recipe, but you can certainly use any other nut or seed butter you have on hand.

Macadamia Granola Ingredients

  • Oats: The foundation of our granola and all of my granola are certified gluten free oatscertified keeps my hubby healthy and safe but you can use any rolled oats you have on hand – just stay away from steel cut oats or quick oats as they will not give you the same result. Time and time again I use these gluten free oats for my granola. Oats provide a hearty and nutritious base. They are packed with fibre, which aids digestion and helps you feel full longer. Oats also contain essential vitamins and minerals like manganese, phosphorus, and magnesium, making them a wholesome start to your day.
  • Raw Macadamia Nuts: These nuts are roughly chopped to add a delightful, buttery flavour to the granola. Macadamia nuts are rich in monounsaturated fats, which are known to support heart health. They also contain antioxidants and essential nutrients such as vitamin B1, magnesium, and manganese, contributing to overall wellness.
  • Raw Walnuts: Roughly chopped walnuts contribute a nutty crunch to the granola. Walnuts are an excellent source of omega-3 fatty acids; beneficial to brain health. They also provide protein, fibre, and a variety of vitamins and minerals, including copper, folic acid, and vitamin E. I put walnuts in almost all of my granola recipes as I find they just match so well and their texture is truly unique to the palette. 
  • Sunflower and Pumpkin Seeds: These seeds add an extra layer of crunch and come with numerous nutritional benefits. Sunflower seeds are rich in healthy fats, protein, and essential nutrients like vitamin E and selenium. Pumpkin seeds are a great source of magnesium, zinc, and omega-3 fatty acids, making this granola a powerhouse of nutrients.
  • Buckwheat Groats: Buckwheat groats provide added texture and nutrition. Despite its name, buckwheat is gluten-free and rich in fibre, protein, and various antioxidants. It adds a unique crunch and enhances the overall nutritional profile of the granola.
  • Ground Flax Seed: This ingredient is a fantastic source of omega-3 fatty acids; vital for heart and brain health. Ground flax seeds also provide fibre and lignans, which have antioxidant properties. Including flax seeds in your diet can help improve digestive health and reduce inflammation.
  • Cinnamon: Adding a warm and aromatic flavour, cinnamon not only enhances the taste of the granola but also comes with health benefits. It has anti-inflammatory properties and is rich in antioxidants. Cinnamon can help regulate blood sugar levels and improve heart health.
  • Salt: A pinch of salt goes a long way and is essential to enhance and balance all the flavours in the granola. It helps bring out the sweetness of the other ingredients and ensures a well-rounded taste.
  • Olive Oil, Maple Syrup, and Macadamia Butter: This combination creates a rich, flavorful coating for the granola. Olive oil adds healthy fats and a smooth texture, while maple syrup provides natural sweetness. Macadamia butter enhances the nutty flavour and adds a creamy richness, making the granola irresistibly delicious. I used this Macadamia Butter and it’s wicked delicious!
  • Vanilla: A touch of vanilla extract adds a sweet aroma and depth of flavour to the granola. Vanilla is not only a flavour enhancer but also contains antioxidants, which contribute to the overall health benefits of this recipe.

How to Make Macadamia Granola

Preheat your oven to 320°F, or 325°F for a conventional oven. In a large bowl, combine the oats, macadamia nuts, walnuts, sunflower seeds, pumpkin seeds, buckwheat groats, ground flax seeds, cinnamon, and salt. Set this dry mixture aside.

In a small pot, heat the olive oil, maple syrup, and macadamia butter over medium heat until they blend together smoothly. Stir in the vanilla extract. Pour this wet mixture over the dry ingredients and mix thoroughly to ensure everything is well coated.

Spread the granola mixture evenly on two baking sheets and bake for 30 minutes, turning the pans halfway through for even baking. Once the granola is golden brown, remove from the oven and let it cool completely before lifting it off the pan. Use a hard spatula to carefully get underneath the granola.   • 3 cups oats
  • 1 cup raw macadamia roughly chopped
  • 1 cup raw walnuts roughly chopped
  • ½ cup sunflower seeds
  • ½ cup pumpkin seeds
  • ¼ cup buckwheat groats
  • 2 tbsp ground flax seed
  • 1 tbsp cinnamon
  • ¾ tsp salt
  • ½ cup olive oil (or any other nut or seed butter)
  • ½ cup maple syrup
  • ½ cup macadamia butter
  • 1 tsp vanilla

Instructions

  • Preheat oven go 320 convection or 325 degrees Fahrenheit.
  • Mix dry ingredients and set aside. Add wet ingredients to a small pot and heat over medium heat until mixture comes together.
  • Pour over dry and mix thoroughly. Add to two baking sheets and bake undisturbed for 30 minutes turning pans half way.
  • Granola should be golden brown. Remove from oven and cool COMPLETELY before lifting it off of pan. Use a hard spatula to get underneath the granola.
  • Store in mason jars at room temperature.

  2. May I substitute maple syrup for molasses or date syrup or is it mandatory for the flavors expected in this granola?

    1. Hey Bryce, i would say that molasses is going to give the recipe a very different flavor and it’s typically more thick than maple but date syrup would probably be a great option to substitute with

    I didn’t have macadamia butter so I used tahini instead and it was saaaaah good!!! Crunchy, hint of saltiness, just enough sweetness – perfecto!

    I made this recipe twice. The first time I followed instructions. The second time I added 1/4 cup cacao and only 1/2 tsp cinnamon. Both came out delicious. This recipe is amazing. My Italian dad who loves nuts and cereal for his breakfast, but he doesn’t love trying different recipes than the traditional ones, loved this granola for his breakfast and asks me for another jar!! I don’t have any trouble to find ingredients here in Switzerland and that is extraordinary! I cooked it at 160 degrees celsius for 25 minutes (fan oven). Thank you very much for sharing this gem!
