What You Need to Make Shamrock Green Pancakes

  • Gluten-Free Flour: I always opt for gluten free flour, ensuring they’re accessible to those with gluten sensitivities or celiac disease. It helps achieve a light and fluffy texture that’s comparable to traditional pancakes.
  • Botanica Health Perfect Greens Powder: This key ingredient boosts the nutritional profile of the pancakes, infusing them with a blend of superfoods like Spirulina, chlorella, and wheatgrass. It not only contributes to the vibrant green color but also packs the pancakes with antioxidants, vitamins, and minerals. Get yours here!
  • Matcha: Adds a subtle, earthy flavor and enhances the green hue of the pancakes. Matcha is rich in antioxidants, particularly catechins, which have been linked to numerous health benefits, including improved metabolism and a calm, focused energy.
  • Baking Powder: Helps the pancakes rise and achieve their fluffiness. It’s crucial for creating the light and airy texture that makes pancakes so irresistible.
  • Soy Milk: Chosen for its plant-based origin, soy milk adds moisture to the pancake batter while keeping the recipe dairy-free. It’s also a source of protein, making the pancakes more nutritious.
  • Eggs: Bind the ingredients together, providing structure and helping the pancakes to set properly. Substitute for flax eggs or any other egg alternatives if you’d like a vegan pancake recipe.
  • Coconut Sugar: Adds a hint of natural sweetness without overwhelming the pancakes. Coconut sugar has a lower glycemic index compared to regular sugar, making it a healthier choice that contributes to the subtle sweetness of the recipe.
  • Vanilla: Infuses the batter with a warm, floral aroma and flavor that complements the matcha and coconut sugar. Vanilla adds a layer of complexity to the pancakes, making them even more delightful.
  • Olive Oil: Ensures the pancakes are tender and adds a hint of richness. Olive oil is a healthier fat option that contributes to the moist texture of the pancakes, preventing them from drying out.

How to Make Shamrock Green Pancakes

Making these pancakes is as easy as pie—or, in this case, as simple as pancakes! Begin by mixing the dry ingredients, ensuring the greens powder is evenly distributed through the flour. Then, mix the wet ingredients in a separate bowl before marrying the two, stirring until just combined to keep the batter light. The right consistency is achieved with a bit of soy milk, adjusted as needed. Cooking these pancakes requires a preheated pan, a little oil or butter, and the patience to wait for those tell-tale bubbles before flipping to achieve golden perfection on both sides. It really is as easy as that; you can top your pancakes with whatever your heart desires.

What is the Botanica Greens Powder?

Botanica Health’s Perfect Greens Powder is what gives these pancakes their unique nutritional profile and appealing color. Some of the mains ingredients include organic Spirulina, chlorella, and wheatgrass, and it’s designed to support your health and vitality with every bite.

St Patrick's Day is here again and that means all things green. I love adding greens powder to my pancakes as it adds so many health benefits! Botanica Health is always organic and has the highest quality products without sweeteners, additives or fillers. It's one of the reasons I love working with them. This greens powder has Spirulina, chlorella and wheatgrass making these some very healthy little pancakes. I added 1 tbsp of sugar (they are pancakes after all) but could totally up that to 1/4 cup if you like your pancakes a little sweeter. These pancakes freeze very well also. Put them in a reusable bag for those busy mornings. You could toast them or microwave them!
