St Patrick's Day is here again and that means all things green. I love adding greens powder to my pancakes as it adds so many health benefits! Botanica Health is always organic and has the highest quality products without sweeteners, additives or fillers. It's one of the reasons I love working with them. This greens powder has Spirulina, chlorella and wheatgrass making these some very healthy little pancakes. I added 1 tbsp of sugar (they are pancakes after all) but could totally up that to 1/4 cup if you like your pancakes a little sweeter. These pancakes freeze very well also. Put them in a reusable bag for those busy mornings. You could toast them or microwave them!

Ingredients
  

  • cups gluten free flour
  • 2 scoop @botanicahealth Perfect Greens Powder
  • 1 tsp matcha
  • ½ tbsp baking powder
  • ¼ tsp salt
  • 1 cup soy milk
  • 2 eggs or flax egg
  • 1 tbsp coconut sugar
  • 1 tsp vanilla
  • 1 tbsp olive oil

Instructions
 

  • Whisk dry ingredients together and set aside.
  • Whisk wet ingredients and add dry to wet. Switch to a spatula and gently mix until no dry ingredients are left. Add a splash more milk if mixture seems to thick.
  • Heat a large pan over medium-high heat and spray with non-stick spray or coat with oil or butter.
  • Use an ice-cream scoop to evenly measure out batter.
  • Wait for bubbles to form and flip. Finish with remaining batter.
  • Serve with toppings of your choice.
