Chai Apple Spiced Pancakes

I am currently writing this as I stare out at this👇🏼. I am in Nassau, Bahamas with a dear friend on a much needed vacation. I haven’t been to the Ashram in 7 years and it’s exactly how I remember it, but better. I am happier, stronger and more open to receiving this time around. We are only on day 2 and I can already feel my shoulders descending. Life is a good chili dog. 

I thought I would take the time to create a couple of posts this week as I’ve been slacking on the blog (but certainly NOT in real life) as all I have right now is time. Me and Dr T @drtarasunshine got together the day before my vacation to create a couple of recipes. She knows my love for pancakes is real so we decided to create a recipe together. Combining hers and mine together we came up with a fabulous stack that is nutritious, filling and tasty as all get out. You get three recipes in one here. So SOOOOOO GOOD!!!!

Chai Apple Spiced Pancakes

Ingredients

PANCAKE INGREDIENTS

  • 1 cup gluten free flour
  • ½ cup buckwheat
  • 1 tbsp baking powder
  • 2 tsp chai spice
  • 1 tbsp coconut sugar
  • tsp sea salt
  • cup cashew milk
  • 2 tbsp avocado oil
  • ½ cup water
  • 1 tsp vanilla

SPICED APPLE INGREDIENTS

  • 1 macintosh apple
  • 1 tsp coconut oil
  • ½ tsp chai spice

SPICE CANDIED NUTS INGREDIENTS

  • 1 cup pecans
  • 1 cup walnuts
  • ½ cup pumpkin seeds
  • 2 tbsp coconut oil
  • 3 tbsp maple syrup
  • ½ tsp salt
  • tsp cayenne
  • tsp black pepper (or 4 turns of grinder)

Instructions

PANCAKE INSTRUCTIONS

  • Mix milk and vanilla and oil together.
  • Whisk together dry ingredients.
  • Add wet to dry and add in up to 1/2 cup water until desired consistency.
  • Make apple spice for topping (See below for recipe).

SPICED APPLES INSTRUCTIONS

  • Melt oil in a pan, add apples and spice.
  • Sauté until the apples are soft. Add to pancakes.

SPICE CANDIED NUTS

  • Preheat the oven to 325 (convection if you have).
  • Melt oil and syrup together, pour over nuts and seeds.
  • Add spices and mix thoroughly.
  • Bake for 15 minutes, lightly turn and return to the oven for 10 more minutes.

  1. Hi. This recipe sounds amazing but I’m a little confused. This is a baked pancake, correct? What kind of pan do you use?

    1. Hi Pam, these pancakes are cooked in a pan on the stove, not in the oven. The oven is for the candied nuts. Use whatever pan you would regularly use for making pancakes. Enjoy!
