Happy December everyone! I woke up to a winter wonderland and (for now) I’m not mad about it. The snow certainly does put you in a festive spirit so I thought chocolate pudding would be a lovely recipe to kick start December with.

I have made vegan chocolate puddings before. They were good. But I have to admit I have a hard time with that much avocado in one go. Don’t get me wrong, I do love it (avocado) but when I tried this recipe out yesterday I realized, wow, THIS is what vegan pudding should taste like!

If you are vegan and you’re reading this I know I won’t have a hard time convincing you around this recipe. If you AREN’T vegan you may need a little more cajoling. You are just going to have to trust me and give it a go. If it makes you a little less leary, I will divulge that I don’t do gross food. I mean, I really really don’t. Does that make you feel any better? OK GOOD. Let’s do this.

Prep Time 10 minutes
Cook Time 1 hour

Servings 2

Equipment

  • food processor or blender
  • fridge

Ingredients

  • 1 12 ounce box silken tofu
  • 42 grams dark chocolate melted
  • 2 tsp vanilla
  • ¾ cup pure cacao
  • ¼ cup maple syrup
  • 1 tbsp freshly ground coffee (optional)
  • pinch of sea salt

Instructions

  • Place all ingredients into the food processor and process until smooth. Scrape down sides as needed. There will still be flecks of coffee in your pudding and that is OK.
  • Transfer to individual jars and cover. Refrigerate for about an hour before serving.
  • Top with coconut whip OR coconut kefir (I added kefir).
  • I ground a cup of my granola in a sand like texture and placed a couple of tablespoons in the bottom of each jar before serving. SO GOOD!
