If you’ve been following my recipe journey, you’ll know I love putting a healthy twist on classic treats. Today, I’m excited to share my latest creation: the Tahini Brown Butter Rice Crispy Treat. This recipe has taken social media by storm, and for a good reason! If you have no idea what I am talking about let me get you up to speed. These Tahini Brown Butter Rice Crispy Treats are quite literally the most delicious snack I’ve had in quite some time. Brown Butter and Tahini in ONE treat?! Yes please. The crunch is perfection, the richness from the brown butter and the tahini all just work too perfectly together. You kind of have to try them to understand it.

Tahini Brown Butter Rice Crispy Treats Ingredients:

  • Puffed Rice: Puffed rice is a light and digestible grain, making it a great base for a snack. It’s naturally low in calories, making it an excellent choice for those who are mindful of their calorie intake. Although it’s not particularly high in protein or fiber, its gentle texture and digestibility make it a good option for a light snack.

Equipment

  • 8x8 pan
  • bowls

Ingredients

  • 4 cups organic puffed rice
  • ½ cup hemp seeds
  • cup browned butter I use salted
  • 1 cup runny tahini plus more for drizzle
  • 7 tbsp maple syrup
  • 1 scoop protein powder
  • pinch of salt
  • 2 tbsp sesame seeds
  • flaky sea salt

Instructions

  • Start by browning butter in a small pot. Allow the butter to cool slightly. you mix puffed rice and hemp seeds.
  • To a large glass measuring cup mix tahini, browned butter, maple syrup, protein powder and salt. Mix until smooth. Pour over puffed rice and hemp seeds. Mix thoroughly! Scrape into 8x8 pan and press down FIRMLY. Place in the freezer for a minimum 2 hours. Remove from the freezer and drizzle with more tahini, sprinkle with more hemp, sesame seeds and flaky salt. Cut into bars and enjoy. Store in the freezer.
