Did someone say Salted Almond Butter Chocolate Chunk Cookies? I think we all deserve a little sweet and salty combo every now and then!

Hello friends!!! As we head into the last two weeks of March I am here to offer a little help and HELP my loves, which come in the form of these cookies. 

I can’t tell you how pleased I am with how these cookies turned out. I will tell you that they are a modified version of a different cookie— both are amazing and so IF you are a fan of peanut butter, those babies are around the corner.

Salted Almond Butter Chocolate Chunk Cookies

Equipment

  • baking sheet
  • oven

Ingredients
  

  • ½ cup vegan butter
  • 1 cup runny almond butter (room temperature)
  • ¾ cup coconut sugar
  • 1 tbsp vanilla
  • 1 flax egg (1 tbsp ground flax+2 1/2 tbsp warm water)
  • cups gluten free flour
  • 1 tsp baking powder
  • ½ tsp sea salt
  • ¾ cup chocolate chunks
  • maldon salt for top

Instructions
 

  • Preheat the oven to 350 degrees.
  • Prepare flax egg by whisking flax and warm water together. Allow to gel for 10 minutes.
  • In a medium sized bowl cream together butter and sugar.
  • Add in almond butter, flax and vanilla. Stir to combine.
  • In a separate bowl whisk together flour, salt, and baking powder.
  • Add almond butter mixture to flour mix and fold until no flour remains.
  • Roll into 1 inch balls and place on parchment or silicone baking sheet. Press with the palm of your hand.
  • Press chocolate chunks into cookies and place in a preheated oven.
  • Bake for 15 minutes.
  • Remove from the oven and sprinkle each cookie with flaky sea salt.

  1. Have you tried with a sugar alternative like monk fruit, stevia or blends? My hubby can’t have coconut. Thanks for all the great recipes!

    1. Hi Karey! Thank you so much for your support. I have used monkfruit in the past but actually find it so much sweeter than sugar. If you were to use that as an alternative I would cut the sugar (in this case monkfruit) to 1/2 cup instead of 3/4 cup. I really dislike the taste of stevia and don’t use it in my recipes. I hope this helps!
