Spring has officially sprung here in Toronto. Last weekend was gorgeous. Everyone was out drinking coffee, walking, running, shopping. It certainly did NOT look like there was a pandemic going on but hey, I GET IT. We are all tired and there is no other better antidote for that than sunshine.
Spring is not all sunshine and warmth. Spring can also mean, wet snow, or SNOW SNOW, rain, damp and most definitely cool temperatures. Hence the reason for my delicious post today. Soup is the best food to warm the soul but homemade PHO takes that warmth and comfort to a whole other level.
This soup has a couple of moving parts. The first part is the homemade veggie stock. This stock is unbelievably delicious all on its own but turned into Pho, it’s seriously next level. I have posted the stock before so head there to make this elixir from heaven and then come back to this recipe. If you’re like, TERI, I don’t have time, use a store bought broth. It will still be delicious.
