Recommended Tools to Make This Granola
Start by adding the oats, nuts, seeds, coconut, raisins, flax, and pumpkin spice to a large mixing bowl. Stir until everything is evenly combined.
Add all the spices to the small mason jar. Cover with a lid and shake to combine. You can also whisk ingredients in a bowl and transfer them to a mason jar afterwards. If you’re not making your own pumpkin spice this company is amazing and their pumpkin spice is top shelf!
In a small pot, heat the olive oil, maple syrup, pumpkin puree, pecan butter, and vanilla over medium-low heat. Stir until smooth and well combined.
Pour the wet ingredients over the dry mix and stir thoroughly. You want to make sure every oat, nut, and seed is coated.
Spread the granola evenly across two prepared baking sheets. Bake at 320 convection for 20 minutes, turn the pans, and bake for another 10-15 minutes until the granola is golden and dry to the touch. Allow it to cool completely before transferring to mason jars. Letting it cool might be difficult but this is where your clumps form!! It’s important my friends.

Can’t wait to try this, but wondering if there’s a substitute you’d recommend for the raisins. Is it fine to just leave them out?
Hi Brandi, any dried fruit will be a suitable substitute for the raisins however it may change the overall flavor – you could certainly try keeping them out – it will not alter the granola as a whole!

Hi Chandana, I’ve never made pecan butter at home – I’ve purchased it in a store however it would likely be a similiar process to making any nut butter. If you cannot find pecan butter you could try using another nut butter like almond or cashew (the taste will differ slightly but it will absolutely still work)

Hi Lisa, it’s written on the recipe card under “Homemade Pumpkin Spice Ingredients” all you need to do is put them into a jar and shake to combine.

Hi Jolie! I’m so glad you loved the granola! For dried cranberries, I usually soak them for about 10 minutes in warm water if they seem a bit tough. It plumps them up beautifully!
