This isn’t my first tortellini soup and it won’t be my last. Protein has become a main player in every meal that I eat so when I had lean ground beef and gluten-free tortellini I knew exactly what I wanted to do! This soup is surprisingly easy to execute and comes together in one pot. It is the perfect mid-week meal as it’s ready in under 45 minutes from start to finish. In the heart of a bustling week, finding a meal that’s both comforting and quick to prepare can be a challenge; so that’s where this delicious Beef Tortellini Soup comes in to satisfy.

Tortellini Soup Ingredients

  • Olive Oil & Chili Flakes: The base of flavour starts here, adding warmth and a slight kick to the soup.
  • Yellow Onion, Carrots, Celery: This classic trio brings sweetness and depth, enriching the broth with essential vitamins.
  • Lean Ground Beef: Provides hearty protein, making the soup filling and satisfying. Lean ground beef also has a lot less oil so this keeps the richness of the soup intact.
  • Dried Oregano & Thyme: These herbs contribute to the soup’s aromatic profile, infusing it with Italian-inspired flavors.
  • Tomato Paste & Passata: Offers richness and a vibrant tomato base that complements the beef and tortellini beautifully.
  • Bone Broth: The foundation of the soup, bone broth adds a nourishing element with added health benefits. You could replace this with any type of broth that you have but I love bone broth as it also provides additional protein.
  • Parmigiano Rind: A secret ingredient for umami depth, don’t toss those cheese rinds—they’re gold in soups!
  • Allessia Tortellini Gluten-Free Ricotta and Spinach: These are my go-to tortellini for soup as they hold up well and bring a cheesy, tender bite that turns this soup from simple to spectacular.
  • Baby Spinach: Adds color and texture; I typically love to include a handful or two of spinach to most of my soups as it really does complement and balance any meal.
  • Grated Parmigiano or Pecorino: For finishing touches add a salty, savoury layer to the soup.

How to Make Tortellini Soup

Creating this soup is a breeze, making it an ideal choice for busy nights. Start by sautéing onions, carrots, and celery in a mix of olive oil and chili flakes. Brown the ground beef, then layer in the flavors with herbs, tomato paste, and passata. The magic happens as you let these ingredients simmer together, filling your kitchen with mouth watering aromas. The addition of gluten-free tortellini and a handful of spinach towards the end keeps the pasta perfectly al dente and the greens vibrant and tender. And if you’re looking for an extra dose of flavour, I’ve got the perfect little kitchen hack that I am sure you’ll use over and over again! If you’re looking to add a little extra flavour to any soup; make sure you start saving your Parmigiano rinds because those babies are filled with flavor and tossing that in any soup is a guaranteed way to add a pop of flavor.

Can I Substitute Ravioli for Tortellini

Absolutely! If tortellini isn’t on hand, ravioli makes a great substitute, still delivering that delightful cheese filling and pasta satisfaction. Just adjust cooking times as needed to ensure the pasta is perfectly cooked. I haven’t tried this recipe with ravioli but I am positive it would still taste absolutely delicious!

How Long Will Tortellini Soup Last

Properly stored in the refrigerator, this Beef Tortellini Soup can be enjoyed for up to 3-4 days, making it a fantastic option for leftovers. The flavors deepen over time, offering an even more delicious experience upon reheating. I also have frozen it before but the tortellini can soften a bit in the reheating process if done over the stove. 

What Goes Well With Tortellini Soup

While this soup is a hearty meal on its own, it pairs wonderfully with a crisp green salad or a slice of crusty bread for dipping. For a lighter touch, serve alongside a simple vegetable side dish. Equipment

  • pot, stove

Ingredients
  

  • 4 tbsp olive oil
  • pinch of chili flakes
  • 1 medium yellow onion diced
  • 2 medium carrots diced
  • 1 stalk celery diced
  • 1 pound lean ground beef
  • ½ tsp each dried oregano & thyme
  • 1 tbsp tomato paste
  • 2 cups tomato passata or sauce
  • 4 cups bone broth
  • parmigiano rind
  • Allessia Tortellini Gluten Free Ricotta and Spinach
  • 4 cups baby spinach
  • 1 cup grated parmigiano or pecorino
  • sea salt and cracked pepper

Instructions
 

  • Heat a large dutch oven over medium high heat. Add olive oil and chili flakes.
  • Add onion, carrot and celery. Saute for several minutes before adding garlic. Cook until fragrant and add ground beef.
  • Cook beef until no pink remains. Add dried herbs, stirring to combine. Season with salt and cracked pepper.
  • Push the beef mixture to the side and add tomato paste. Cook tomato paste for 1 minutes and mix everything together. Add in tomato passata or sauce stirring to combine. Pour in bone broth. Bring to a boil, then reduce to a simmer for 20 minutes, stirring occasionally.
  • Add in pasta. Cook for 3 minutes and add in spinach and cheese. Cook until spinach starts to wilt.
  • Taste for seasoning. Serve into bowls.
