Adzuki Bean Hummus

As a hummus and garlic lover it was imperative that this Adzuki Bean Hummus be extra garlicy!

Happy Monday people!! I don’t know about you but I could have stayed in bed for a whole lot longer today. I’ve been on GO for the last little while and have one more week until a wee reprieve. I am taking some much needed time off to be with family, and my mister. I hope you all get some time too!! 

To today’s post… I have a new obsession.. well actually a couple new obsessions but TODAYS is all about the underrated ADZUKI bean. I love chickpeas, don’t get me wrong. I love everything we do with them but lately, they just don’t love me.

I have been plant-based for nearly 8 years (wow, where does the time go??) so in that time I’ve eaten a few chickpeas, lentils, black beans, navy beans.. you get the point. I’ve consumed a few beans🤣 and with that I’ve had a bit of gas. I’m used to the flatulence that comes with my plant protein diet and the mister and I are 100% ok with it. It’s kinda funny actually but what ISN’T funny is when you feel like crap from eating the foods you love. Enter in the chickpea. Lately it’s been more uncomfortable so I thought I would switch things up and try incorporating different legumes. Turns out the ADZUKI bean and I get along great! 

I made this hummus extra garlicky but you certainly don’t have to.

Adzuki Bean Hummus

Prep Time 5 minutes
Cook Time 10 minutes
Course Dips & Spreads, Side Dish

Equipment

  • blender

Ingredients
  

  • 1 cup cooked beans (I made mine from scratch)
  • 2 tbsp tahini paste
  • 1 lemon juiced
  • 2 small garlic cloves
  • ½ tsp  cumin
  • ½ tsp ground ginger
  • 1 tsp vegan sriracha
  • 2 tbsp olive oil (more to garnish)
  • water to thin
  • salt and pepper to taste

Instructions
 

  • Place all ingredients in a food processor and blend, scraping down sides as needed.
  • Start adding in water a tbsp at a time until you reach desired consistency.
  • Check for seasoning and VOILA. Serve with crudite, crackers or spread on toast!
