Butternut Squash Waffles

Waffles are something special and when you make them with ingredients like Butternut Squash it's bound to be a good time!

Hello my friends! It’s Wednesday and therefore WAFFLE WEDNESDAY. Gotta love how Instagram has coined all of the days (at least some of the days) to associate with our favourite foods. 

I got a waffle maker a couple of years ago after never having one and LET ME TELL YA, game changer. I’ve been a pancake maker forEVER but thanks to the waffle iron I’ve branched out 😂

Are you team sweet or savoury? With my waffle recipe (or pancakes for that matter) you don’t have to choose!You can make the waffles and then decide. I like adding all sorts of awesome on my waffles, be it sweet or savoury, but don’t like the actual batter to be sweet. I created a Butternut Squash Waffle for RAWCOLOGY and have gone both directions with it. All yummy. Here’s my recipe!

Butternut Squash Waffles

Equipment

  • waffle iron

Ingredients
  

  • 2 cups cashew milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla
  • ¼ cup pumpkin seed oil (or avocado)
  • ½ cup steamed and mashed butternut squash
  • 1 cup buckwheat flour
  • 1 cup oat flour
  • 2 tbsp ground flax
  • 1 tsp pumpkin spice heaping
  • ½ tsp fine salt
  • 1 tbsp baking powder
  • ½ cup water

Instructions
 

  • In a large measuring cup measure out cashew milk, add in ACV vanilla, oil, and steamed squash. Whisk to combine.
  • In a separate bowl whisk together dry ingredients.
  • Add wet to dry. Fold in dry and wet and add in water. Your batter will be thick!
  • Preheat waffle iron and spray with nonstick coconut oil.
  • Measure approximately 1 cup of batter and place on iron.
