Get ready to be transported to a Canadian childhood Saturday lunchtime in the best way possible. My Tomato Soup and Grilled Cheese are all things warm and fuzzy from childhood memories and I am so delighted to be sharing this classic recipe with you. I am teaming up with my dream tomato brand Mutti to bring you this incredible simple, classic and delicious recipe. Soup is one of my favourite meals ever since being a little one and it still gives me all the feelings of comfort, nostalgia and cheer it did as a child.

Growing up, this was my go-to weekend lunch, a simple yet delightful meal that always brought smiles around our family table. Today, I’m giving this classic combo a little twist with the rich flavors of Mutti Strained Tomatoes and the bold taste of Irish Cheddar.

Main Ingredients for this classic lunch combo:

  • Mutti Strained Tomatoes (Passata): These sun-ripened Italian tomatoes are transformed into a smooth, velvety puree, infusing the soup with a naturally sweet and rich tomato flavour.
  • Irish Cheddar: This robust, flavourful cheese takes the grilled cheese sandwich to a whole new level, adding a creamy and tangy dimension. You had to know I wasn’t going to go with any simple cheese slices out here!
  • Sourdough Bread: The perfect canvas for the grilled cheese, sourdough adds a delightful crunch and a slight tang, complementing the creamy cheddar. In my case it’s also gluten free so the mister can partake in this perfectly deliciously grilled cheese!
  • Fresh Herbs and Spices: A sprinkle of dried basil and chili flakes brings a subtle layer of warmth and aroma to the soup, enhancing its comforting essence.

Tomato Soup & Grilled Cheese

Ingredients

Tomato Soup Ingredients

  • 3 tbsp olive oil
  • 1 pinch chili flakes
  • 1 shallot sliced
  • 3 cloves garlic minced
  • 1 tsp dried basil
  • 2 Mutti Strained Tomatoes @mutti_canada
  • 3 cups broth of choice
  • ½ cup cream
  • sea salt and cracked pepper

Grilled Cheese Ingredients

  • ¼ cup salted butter
  • 2 slices sourdough bread
  • ⅓-½ cup shredded Irish cheddar

Instructions

  • Heat a large dutch oven or heavy bottomed pot over medium-high heat.
  • Add olive oil and chili flakes. Once oil is hot, add shallots. Saute for 2-3 minutes before adding garlic. Cook until garlic is fragrant. Approximately 1 minute. Add dried basil and stir to coat.
  • Add both jars of Mutti Strained Tomatoes. Add 2 tbsp water to both jars. Add lids and shake vigorously to loosen up any leftover passata. Add to the pot.
  • Pour in broth and stir. Bring to a boil, reduce heat to medium-low and cook for 10 minutes.
  • Stir in cream. Season with salt and cracked pepper.

Grilled Cheese Instructions

  • Heat a large cast-iron over medium-high heat. Add butter. Melt the butter and add bread. Toast the bread on one side, flip and add cheese to the toasted side. Place the second piece of bread on the cheese. Carefully place a heavy pot or pan to the sandwich and cook for 2-3 minutes until golden brown. Flip and do the same on the second side.
  • Enjoy with a bowl of Tomato Soup!
