There’s granola, and then there’s Cookie Butter Granola and let me tell you – there’s a difference. Now you’re probably here because you have already tried one of my granolas before, or maybe you’re here for the first time because… well, cookie butter! Regardless of how you got here, get ready for a game-changer in the world of snacks and desserts. After months of dreaming and recipe testing, I’ve finally perfected this flavor-packed granola that’s sure to become your new favorite.
While you could go the easy route and use store-bought cookie butter, I strongly recommend making your own with my special Cookie Butter recipe for a healthier and more satisfying experience. With no weird ingredients or chemicals, this homemade granola not only tastes better but is better for you.
The secret to that beloved Biscoff flavor lies in the combination of cinnamon, ginger, nutmeg, and, most importantly, the homemade cookie butter. This blend of spices creates a warm, comforting taste profile that, when combined with the richness of the cookie butter, makes each bite of granola a delightful experience.
Creating this granola is a simple process that involves mixing dry ingredients with a luscious combination of olive oil, maple syrup, and homemade cookie butter, then baking until perfectly golden and clumpy. The result? A crunchy, clustery granola that’s irresistibly delicious.
*Pro Tip!* Pressing the granola firmly onto the pans before baking is the key to creating those large, satisfying clumps. Just make sure the layer isn’t too thick to ensure even cooking and perfect clumping.
This granola is perfect as a topping for ice cream, mixed into yogurt, or simply enjoyed by the handful. Its versatility makes it a great addition to your breakfast table or as a midday snack. It’s my new favorite breakfast and I’ve been pairing it with my hemp cashew milk.

Thanks! Can u sub nut butter for the cookie butter?
Hey Gayle, yes you can however it would really defeat much of this recipes purpose as it is a cookie butter granola! I have many other granola recipes that perhaps will fit your desires better. However give it a try if you’d like!
I’d love to try this. So exhausted and unmotivated lately though. I hope to try it soon though. I baked bread today for the first time, so hell!, I know I am fully capable. ❤️
Hey Bethany, I am excited for you to try this recipe, the cookie butter could probably taste amazing on the freshly baked bread as well!! Allow yourself grace in the moments you’re feeling unmotivated! It happens to the best of us 🙂
This looks so good! I can’t wait to try it. Unfortunately I am allergic to coconut. What can you suggest as a good alternative? Thanks
Hey Cy, you could always omit the coconut and put any other ingredient in its place or nothing at all. You could also increase the amount of nuts or seeds in it’s place if you wanted to.
Hi! I have just finished my first batch. Still cooling down, but my kitchen already smells absolutely divine… I can’t wait to try it! 🤤 Also, warning, the cookie butter is addictive! Thank you so much! ❤️ PS – the only ingredient I left out was the coconut, because I hate it… but I think that the granola still looks and smells wonderful!
I love that you gave this recipe a try!! The smell of this granola baking is intoxicating in the best way. So glad you made it your own!! Happy crunching
Delicious! I had the granola with the cashew milk I made from your recipe. I’m looking forward to having it all week!
Hey Sherry!! I love that you paired the two together, what a treat 🙂 Thank you for the review!
Hi Teri-Ann! Looking forward to making this. How long will this recipe and the cookie butter recipe keep for?
Hey Emily! I can’t wait to hear what you think! My cookie butter lasts at least 2 weeks in my room temperature cupboard but it never lasts that long. NOMNOMNOM!
How do I make the cookie butter

Can I use coconut oil instead of olive oil?
Hi Stephanie, you can use coconut oil but it is a thinner oil so you may not achieve the same clumps as you would with olive
This is so easy and so so satisfying! I was a little impatient while making the cookie butter so it wasn’t as smooth as I’d hoped but still delicious! My family is pretty picky with granola and nut choices, but they devoured this right up. Thanks for the recipe!
Hey Brooklyn, love that the whole family was down for this granola! It really is the bomb and good for you also making the cookie butter from scratch! It certainly is a bit of a labour of love so I don’t blame you for getting a tad impatient. I appreciate you taking the time to rate and review this recipe – it means a lot!
Looks so good!
Can i use the same proportion of apple sauce instead of olive oil?
Hi Melanie! I have not tried using apple sauce in place of the oil so I cannot guarantee the results!
Absolutely delicious! And so easy to make. Love all of Terri’s recipes
thank you thank you!!!!
Hi, I am making this right now but a little confused about what you meant by turn the pans?
Hey Sharon, rotate the pan in the oven – take the pan out and turn the side that was closest to the door towards the back. I hope this helps for your future batch
Delicious 😋
So happy you enjoyed this recipe Maria! Thanks for taking the time to rate and comment!
