SALAD INGREDIENTS 4 cups baby spinach 2 cups baby arugula handful pea shoots ½ cup chickpeas canned, rinsed 1 apple sliced ½ avocado diced ½ cup walnuts crushed 1 green onion sliced ½ cup vegan goat cheese crumbled ⅓ cup red cabbage pickled ¾ cup cucumber diced ¼ cup pumpkin seeds APPLE CIDER VINEGAR DRESSING INGREDIENTS ½ cup olive oil organic extra-virgin ¼ cup apple cider vinegar organic ½ lemon juiced 1 tbsp dijon mustard 1 tbsp pure maple syrup (or raw honey) 1 clove garlic (minced) pinch or two of sea salt
Toss salad ingredients in a big bowl.
Mix all ingredients in a small bowl to create dressing.
Add a couple tbsp of dressing to coat the salad and ENJOY.
