Flourless Nutella Cookie (small batch!)

These Nutella Cookies are rich, chocolatey, flourless, gluten free, and high in protein thanks to banana, homemade Nutella, chocolate protein powder, hemp seeds, chopped hazelnuts, and dark chocolate. They are soft, chewy, naturally sweet, small-batch, and perfect for breakfast, snacks, desserts, or any time you want a healthier cookie that still tastes like a treat!

Ingredients

Instructions

  • Preheat oven to 350.
  • Place parchment onto a cookie sheet.
  • Add banana to a bowl and mash well with a fork.
  • Pour in Nutella and add vanilla, protein powder, hemp seeds, salt, hazelnuts and most of the chocolate. Stir well to combine.
  • Measure out 7 cookie balls onto parchment paper.
  • Use the spatula to press them down.
  • Add remaining chocolate on top.
  • Bake for 15 minutes.
  • Sprinkle with flaky salt while still hot.
  • Allow them to cool for 30 minutes on the cookie sheet.
  • Refrigerate any uneaten cookies.

Notes

Any of my nut or seed butters will work in this cookie.
Vanilla protein will also work; they just won't be as chocolatey.
