This Cinnamon Creme Brulee is a rich, creamy, protein-boosted twist on the classic dessert made with egg yolks, whipping cream, vanilla bean, cinnamon, a little sugar, and protein powder. It has a silky custard base, a crisp caramelized sugar top, and that very satisfying crack when your spoon breaks through. Separate egg yolks and place in a bowl. Add sugar, protein powder, cinnamon, and salt. Whisk to combine until smooth and silky.
To a small pot, add cream, vanilla, and pod. Bring to a shimmer, not to a boil.
Use a ladle to add cream to egg and sugar mixture, whisking constantly. After 3 ladles, add remaining cream to the egg mixture, whisking until fully incorporated.
Boil water in a kettle.
Place 4 ramekins in a baking dish. Pour the brulee mixture evenly until finished.
Carefully add boiled water to the baking dish until it reaches 1/2 way up the ramekins.
Place in the oven and bake for 30-35 minutes until the cream is no longer jiggly.
Let them rest at room temperature until cool enough to place in the fridge.
Transfer to the fridge for 2-3 hours or until you are ready to serve.
Add 1 1/2 tsp sugar to the top of each ramekin. Working quickly, caramelize the sugar using a kitchen torch until the sugar is lightly browned and hardened.
Best eaten after the sugar has been caramelized on the top.*
Notes
If you aren't eating all at once, wrap the remaining creme brulee in plastic wrap. Only caramelize with sugar when you are ready to eat. The caramelized sugar gets soggy otherwise.
