Banana Walnut Bread

This Banana Walnut Bread is both vegan, gluten free and the perfect dessert, snack or breakfast. Easy to make and lasts for a few days if you don't eat it all first!

Ingredients

  • 2 cups gluten-free flour blend
  • ½ cup date sugar
  • ¼ cup coconut sugar
  • 3 tsp baking powder
  • ¼ tsp salt
  • 2 tsp true cinnamon
  • 3 Medium Ripe Bananas 1 and 1/3 cups mashed
  • ½ cup cashew milk
  • 3 tbsp avocado oil
  • 1 flax egg (1 tbsp flax + 2 1/2 tbsp warm water)
  • ½ cup walnuts chopped

Instructions

  • Preheat the oven to 350. Grease and line a loaf pan with parchment paper.
  • In a large bowl prepare flax egg and set aside.
  • In a large measuring cup, sift dry ingredients together.
  • Add mashed banana, milk and oil on top of prepared flax egg and whisk to combine.
  • Add dry to wet and mix thoroughly. Pour batter into the prepared pan and sprinkle with walnuts.
  • Bake for 55-60 minutes or until the toothpick comes out clean. Leave in the pan to rest for 10 minutes and then remove onto a wire rack. Let cool completely before slicing.
