Banana Walnut Bread

This Banana Walnut Bread is both vegan, gluten free and the perfect dessert, snack or breakfast. Easy to make and lasts for a few days if you don't eat it all first!

- 2 cups gluten-free flour blend
- ½ cup date sugar
- ¼ cup coconut sugar
- 3 tsp baking powder
- ¼ tsp salt
- 2 tsp true cinnamon
- 3 Medium Ripe Bananas 1 and 1/3 cups mashed
- ½ cup cashew milk
- 3 tbsp avocado oil
- 1 flax egg (1 tbsp flax + 2 1/2 tbsp warm water)
- ½ cup chopped walnuts
Preheat the oven to 350. Grease and line a loaf pan with parchment paper.
In a large bowl prepare flax egg and set aside.
In a large measuring cup, sift dry ingredients together.
Add mashed banana, milk and oil on top of prepared flax egg and whisk to combine.
Add dry to wet and mix thoroughly. Pour batter into the prepared pan and sprinkle with walnuts.
Bake for 55-60 minutes or until the toothpick comes out clean. Leave in the pan to rest for 10 minutes and then remove onto a wire rack. Let cool completely before slicing.
