SALAD INGREDIENTS
- 4 cups baby spinach
- 2 cups baby arugula
- handful pea shoots
- ½ cup canned rinsed chickpeas
- 1 apple sliced
- ½ avocado diced
- ½ cup crushed walnuts
- 1 green onion sliced
- ½ cup crumbled vegan goat cheese
- ⅓ cup pickled red cabbage
- ¾ cup diced cucumber
- ¼ cup pumpkin seeds
APPLE CIDER VINEGAR DRESSING INGREDIENTS
- ½ cup organic extra-virgin olive oil
- ¼ cup organic apple cider vinegar
- ½ lemon juiced
- 1 tbsp dijon mustard
- 1 tbsp pure maple syrup (or raw honey)
- 1 clove garlic (minced)
- pinch or two of sea salt
Toss salad ingredients in a big bowl.
Mix all ingredients in a small bowl to create dressing.
Add a couple tbsp of dressing to coat the salad and ENJOY.
