Sugar Free Strawberry Ice Cream Bars

These sugar-free Strawberry Ice Cream Bars are creamy, fruity, high in protein, and made with simple ingredients. They're refreshing, naturally sweet, low-carb, and the perfect freezer snack for hot summer days when you want something to cool you down!

Equipment

Ingredients

  • 1 cup Greek yogurt*
  • 1 cup 2% cottage cheese*
  • 1 cup strawberries fresh or frozen
  • 1 ripe banana frozen banana would be great too!
  • 1 tsp vanilla
  • pinch salt

Instructions

  • Add all the ingredients into a blender or a food processor.
  • Blend until smooth.
  • Pour into ice cream bar moulds.
  • Place on a flat surface in the freezer for 4 hours or overnight.
  • Once fully set, pop them out of the mould and enjoy!

Notes

  • Use a plant-based yogurt if you're vegan.
  • Any percentage of cottage cheese works. I don't do low-fat, but you do you!
  • If you want to dip these in chocolate, add 1 cup of dark chocolate chips to a narrow glass container that's wide enough to dip them. Microwave in 30-second increments until smooth. Approximately 90 seconds.
