Single Serve Chicken Pasta

This Single Serve Chicken Pasta is creamy, comforting, and perfect for busy nights. Made with sautéed vegetables, shredded chicken, Parmigiano, and hot pasta water, it comes together in under 30 minutes and makes the ideal quick, satisfying meal for one. Cozy, nourishing, and beautifully simple.

Equipment

  • medium-sized pot with lid
  • deep sided pan

Ingredients

  • 4 oz short pasta I used cavatelli
  • 2 tbsp olive oil
  • 1 pinch chilli flakes
  • ½ shallot or onion, sliced
  • 1 clove garlic minced
  • 3 cremini mushrooms sliced
  • ½ zucchini sliced into rounds
  • 4 oz shredded and cooked chicken
  • ¼-½ cup grated Parmigiano
  • 1 tbsp butter
  • cup hot pasta water
  • sea salt and cracked pepper to taste

Instructions

  • Salt the boiled water and cook the pasta according to the package. Mine took 14 minutes.
  • To a pan over medium/high heat, add olive oil and chilli flakes.
  • Add shallot and cook until it starts to soften.
  • Add mushrooms, tossing to coat. Mushrooms should start to soften after a couple of minutes. Add zucchini rounds. Season with salt and cracked pepper.
  • Add cooked chicken and Parmigiano. Stir everything together. The mixture will look dry. Add 1/4 cup of pasta water and stir until cheese starts to melt into the water, creating a "sauce". Add butter and pasta.
  • If pasta looks a little dry, add a bit more water. Drizzle with olive oil, add a tbsp more cheese and toss one last time. Check for seasoning and serve.

Notes

Use whatever pasta you have on hand. Gluten-free works amazingly too.
