  • In a medium bowl with a lid, add the pumpkin spice milk.
  • Whisk in yogurt, pumpkin puree, coffee, maple syrup, vanilla and pumpkin spice until fully combined.
  • Add chia seeds and whisk for 2 minutes. Let the pudding rest for 2 minutes, then whisk again for 2 more minutes*.
  • Cover the pudding with a lid and refrigerate until thickened.

Notes
