Pumpkin Cake (Refined Sugar Free!)

This Pumpkin Cake is moist, naturally sweet, refined sugar free, and made with ripe bananas, Medjool dates, pumpkin puree, pumpkin spice, and walnuts. It is soft, sturdy, deeply cozy, and perfect for breakfast, snacking, dessert, or anytime you want a healthier fall-inspired cake that still tastes like a proper treat!

Ingredients

  • 2 ripe bananas
  • 3 eggs
  • 1 cup pumpkin puree
  • 11 soft dates* soaked in hot water for 15 minutes
  • ½ cup olive oil
  • 1 cup milk of choice
  • 2 tsp vanilla
  • 2 cups bread flour
  • ¼ cup protein powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pumpkin spice
  • ½ tsp sea salt
  • ½ cup walnuts chopped

Instructions

  • Preheat oven to 350.
  • Line an 9x9 round pan with parchment paper leaving a overhang.
  • Drain dates and remove pits.
  • Add dates, bananas, eggs, pumpkin puree, milk, vanilla and olive oil to a blender and blend until smooth.
  • In a separate bowl whisk dry ingredients until well combined.
  • Add wet to dry and fold in until no dry remains.
  • Scrape batter into prepared pan and tap on the counter a few times to release air bubbles.
  • Sprinkle chopped walnuts on top.
  • Bake cake for 50-52 minutes until a toothpick comes out clean.
  • Allow cake to rest in round pan for 15 minutes. Use the over hang of parchment to transfer cake to a wire rack to cool
  • Once cake has fully cooled you can transfer onto cake stand or plate to cut.
  • Keeps well at room temperature for a couple of days.

Notes

I use medjool dates as they are so much plumper then deglet dates. If you are using a smaller date increase the dates to 15. Make SURE YOU REMOVE THE PITS!
