Equipment

Ingredients

  • 2 bananas very ripe
  • ½ cup pumpkin puree
  • ½ cup cottage cheese
  • ¼ cup olive oil
  • 5 dates pitted
  • 1 tsp vanilla
  • 1 egg
  • 1½ cup bread flour
  • ¼ cup protein powder
  • ¼ cup hemp seeds
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp pumpkin spice
  • ½ tsp salt
  • ½ cup milk of choice
  • ¼ cup pumpkin seeds

Instructions

  • Preheat oven to 425.
  • Line a standard muffin tin with paper or silicone liners.
  • Add egg, pumpkin, cottage cheese, oil, bananas, dates, and vanilla to a blender and blend until smooth.
  • To a large bowl, add dry ingredients and whisk to combine.
  • Add wet to dry and stir until no dry ingredients remain.
  • Fold in milk.
  • Use an ice cream scoop to divide batter, filling the cups all the way up.
  • Bake for 5 minutes at 425.  Decrease the temperature to 375 and bake for 20-22 more minutes, until a toothpick comes out clean.
  • Allow the muffins to rest in the tin for 10 minutes.
  • Remove from the tin and place on a wire rack to cool.
  • Enjoy with a pat of butter.

Notes

These muffins take a little longer to bake than a standard muffin. The muffins will be super moist inside, with a golden-brown top.
If you don't want to add bananas, add 1/2 cup coconut or brown sugar instead.
