Peanut Butter & Jelly Yogurt Bites

If you're looking for a no bake snack thats high protein, nostalgic and easy to make, these Peanut Butter & Jelly Yogurt Bites are about to become your new obsession. Made with creamy Greek yogurt, juicy raspberries, peanut butter, and Botanica protein powder, these frozen yogurt bites will remind you of your childhood all while satisfying that sweet tooth and giving you a little dose of protein magic!

Equipment

  • ice cream scoop
  • freezer, cookie sheet, parchment paper

Ingredients

Instructions

  • Place parchment paper onto a cookie sheet. Make sure there’s enough space in your freezer for the cookie sheet to lie flat.
  • To a large bowl, add raspberries and yogurt. Use a fork to mash raspberries into yogurt.
  • Add peanut butter, protein powder, vanilla and maple syrup. Stir until well combined.
  • Use an ice cream scoop to measure out bites. Place in the freezer until hard. Approximately 2 hours.
  • Melt chocolate in the microwave in 30 second increments until fully melted.
  • Stir in olive oil.
  • Coat yogurt bites on all sides. Use a fork to retrieve from the chocolate. Tapping to remove any excess chocolate.
  • Sprinkle with flaky salt.
  • Place back into the freezer to harden.
  • Allow them to thaw for a few minutes before eating.

Notes

  • Blueberries and strawberries would also be a great option.
  • Any nut or seed butter will work!
  • Use milk or white chocolate if you prefer.
  • Coconut oil also works works very well.
