Invisible Protein Apple Cake (High Protein, Low Sugar!)

Fall in love with this healthy Invisible Apple Cake! This high-protein, reduced-sugar apple cake uses layers of thinly sliced apples, eggs, milk, honey, melted butter, vanilla, flour, Botanica vanilla protein powder, cinnamon, and sliced almonds to create a soft, warm, and cozy fall dessert. Serve it with Greek yogurt, whipped cream, or vanilla ice cream for the perfect combination of flavours!

Ingredients

  • 3 large apples peeled, cored and thinly sliced
  • 3 eggs
  • ¾ cup milk
  • 2 tbsp honey
  • 2 tbsp melted butter
  • 1 tsp vanilla
  • ½ cup all-purpose flour
  • ¼ cup Botanica vanilla protein powder
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • ⅓ cup sliced almonds
  • 1 tsp icing sugar optional

Instructions

  • Preheat oven to 350.
  • Line a standard loaf tin (11x5) with parchment paper, with enough for an overhang.
  • Peel and core the apples. If you don’t have an apple corer, slice the peeled apple in half and use a teaspoon to take out the core.
  • Set your mandolin to a thin setting. You want the slices to be thin enough to bend. USE THE SAFETY DEVICE TO AVOID INJURY.
  • In a large bowl, whisk eggs, honey, butter and vanilla until smooth.
  • Add dry ingredients and whisk until the mixture is fully combined. The batter will be a little runny, and that is good.
  • Fold the apples into the batter until well coated.
  • Transfer into the prepared loaf pan, smoothing the top as best as you can with a spatula.
  • Top with sliced almonds.
  • Bake for 52-55 minutes or until the top is golden brown.
  • Allow the cake to rest in the tin for 15 minutes.
  • Remove from the tin and allow it to rest on a wire rack for 1 hour.
  • Dust with icing sugar if desired.
  • Slice and serve with Greek yogurt or ice cream.

Notes

  • I used Paula Red apples for this cake. Use any apple except Red Delicious; those apples just aren't good, period.
  • If you prefer not to use protein powder, you can simply omit it.
  • Gluten-free flour works perfectly in this recipe, too.
  • If you don't own a mandolin, you can use a sharp knife, but try to slice thin to achieve the "invisible" look. Please use the safety device if you are using a mandolin. They are extremely sharp and can be lethal (read the blog!)
