High Protein Cottage Cheese Lava Cake

This High Protein Cottage Cheese Lava Cake is a quick, gluten-free treat made with cottage cheese, chocolate protein powder, and dark cacao. In just under 10 minutes, you’ll have a rich, gooey lava cake that’s high in protein, low in sugar, and big in flavour. Serve with a scoop of vanilla ice cream for the ultimate dessert experience!

Equipment

  • microwave
  • small blender or food processor
  • 8oz ramekin

Ingredients

Instructions

  • Lightly grease a ramekin and set aside.
  • To a small blender add cottage cheese, egg, protein powder, cacao powder, maple syrup and salt.
  • Blend until smooth and creamy.
  • Pour into ramekin.
  • Top with chocolate chips.
  • Place ramekin on a small plate (just in case it runs over!) and microwave on high for 90 seconds.
  • Sprinkle with flaky salt and wait for it to cool for 2 minutes.
  • Best served with vanilla ice cream.

Notes

  • If you don't have chocolate protein powder, use what you have. The cacao/cocoa will make it chocolatey enough!
  • You don't need to use black cacao. Regular cocoa powder works great too!
  • If you prefer to use chopped dark chocolate instead of chocolate chips, that works too!
