Banana Bread Donuts

Think of banana bread but in a bite size treat and then smear it with peanut butter and chocolate icing. SO GOOD

DONUT INGREDIENTS

  • 2 large bananas mashed
  • 3 tbsp coconut oil melted and cooled
  • 1 tsp vanilla
  • 2 tbsp coconut sugar
  • ½ cup oat milk
  • 1 cup gluten-free flour
  • 2 tbsp coconut flour
  • 1 tsp cinnamon
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

GLAZE INGREDIENTS

  • 80 g chocolate chopped, melted
  • ¼ cup peanut butter runny

Instructions

  • Grease a donut pan and preheat the oven to 375 degrees.
  • Mix everything well and put it into a piping bag. Fill the donut mould up to the edge of the pan.
  • Bake for 15 minutes. Allow for the donuts to cool in the pan for 2-3 minutes and then turn them out onto a cooling rack. Be forceful! Allow them to cool completely before glazing.
  • Melt chocolate in the microwave or stovetop and then add peanut butter.  Stir to combine. Dip donuts and top with flaky sea salt and cacao nibs if desired.
