Peanut Butter Hemp Crispy Treats

These Peanut butter Hemp Crispy Treats honour a special type of nostalgia but are healthy, vegan and gluten free!

Ingredients
  

  • 1 cup peanut butter (runny and organic —plus more for topping)
  • 7 tbsp maple syrup (organic and local)
  • 1 tsp vanilla
  • 2 tbsp coconut oil
  • pinch of salt (plus more for topping)
  • 4 cups puffed rice
  • ¼ cup hemp seeds (plus more for topping)

Instructions
 

  • Place parchment in an 8/8 pan. In a microwaveable bowl (or stove top) place peanut butter, syrup and oil. Microwave until mixture is melted (30 seconds is all it takes), add in vanilla & salt and stir.
  • In a large bowl place crispy rice. Pour peanut butter mixture over puffed rice and stir. Add in hemp seeds and mix thoroughly. Press firmly into the pan. Place in the freezer to set for 2 hours. Remove from the freezer and drizzle 1 tbsp of peanut butter on top.
  • Sprinkle extra hemp and sea salt before cutting into bars.
  • Store in the freezer.
